Coach Caroline’s is inviting you and your kids to join her in her kitchen classroom to celebrate Shrove Tuesday , flipping instant oats, milk and sugar on their head to create yummy breakfast pancakes. Children need an energy boost to get their day off to a good start, and the oats in these pancakes will create the sustained energy their brains and bodies need to get them through a busy morning.

 A nutritious breakfast should also fruit and dairy products, and these delicious caramelised bananas can made into ice cream or a yoghurt topping.

 Your kids are sure to enjoy making these breakfast treats and will love eating them too.

All you need to know…

    Oat Pancakes

    • Milk ( 1 cup )

    • Instant oats ( 1 cup )

    • Butter ( 1 tbsp )

    • Eggs ( 2 )

    • Self Raising flour ( 2/3 cup )

    • Sugar ( 1 tbsp )

    • Salt

    Fried Bananas

    • Ripe bananas ( 3 )

    • Tinned pineapple

    • Brown sugar ( 1 tbsp )

    • Butter ( for frying )

    • Limes or lemons ( 2 )

    • Double cream yoghurt ~ plain or fruit flavoured ( 500ml )

    • Condensed milk ( 1 cup ) ~ if you want to make ice cream

  • Recipe

    Oat Pancakes

    1. Pour 1 cup of milk into a large bowl.

    2. Add 1 cup of instant oats, and let it stand for 10 minutes for the oats to soften.

    3. Add 1 tbsp melted butter, 2 beaten eggs, 1 tbsp sugar and a pinch of salt.

    4. Whisk to combine.

    5. Gradually add 1 cup self raising flour.

    6. Whisk until just combined.

    7. Let it stand for 5 minutes more.

    8. Heat butter in a large frying pan.

    9. Cook pancakes for 2minutes on each side.

    Caramelised Fried Bananas

    1. Slice the bananas.

    2. Squeeze the lemons or limes.

    3. Heat butter in a frying pan.

    4. Sprinkle 2 tbsps of brown sugar over the bananas, and cook them for a few minutes until caramelised.

    5. Put some yogurt on a plate and add the bananas.

    Ice cream option

    1, Put the condensed milk into a large bowl.

    2. Add the bananas, yogurt and lemon or lime juice.

    3. Mix it all together.

    4. Pour your ice cream mixture into a shallow dish, cover with cling wrap, and freeze for 4 hours.
