Coach Caroline is inviting you and your kids to join her in her kitchen on a trip to Mexico the home of Tacos, Burritos and retried beans. Scrambled eggs, salsa and baked beans wrapped up tight. This breakfast burrito is the perfect bite.
Your kids are sure to enjoy making these breakfast treats and will love eating them too.

Cherry tomatoes ( easier with younger children )
Red onions
Cheese

Recipe
1. Break your eggs into a jug or small bowl.
2. Beat them and season with salt and pepper.
3. Chop the onion finely.
4. Cut the cherry tomatoes in half. Season with salt and pepper and a drizzle of olive oil.
5. Grate the cheese.
6. Melt some butter in a pan, and scramble eggs until lightly set.
7. Add the grated cheese and cook for a few minutes more.
8. Remove the eggs.
9. Fry the onion until soft.
10. Add the baked beans to the pan. 👩🍳 Cooks Tip ~ I usually add the sauce to the onions and cooked it down, then add the beans.
11. Fry until caramelized.
12. Heat wrap in microwave ~ 1 minute.
13. Assemble wrap ~ beans, tomatoes then eggs. Lime juice and coriander ( optional)
14. Fold up tightly.
